Happy Friday!
It's already the third week in November... crazy!
This week has been a hectic one, mostly consisting of catching up on late homework (oops) and avoiding my sink full of dirty dishes (double oops), but it's been a good one! Jon has off this weekend, and that was unplanned. So I'm looking forward to finishing my homework this afternoon and then enjoying the rest of the weekend!
Wanna know what else we've been up to this month?Road trip to Bridgewater
My brother is a freshman at Bridgewater College, and everyone but Jon and I had been to see him...so we took a road trip! It was a couple of weeks ago when fall colors hadn't reached our corner of VA, but we found plenty when we travelled north!
We watched his soccer game, bought dairy-free toasted almond coconut gelato, threw leaves, and bought matching Bridgewater shirts!
On our way back we found this really cool mountain to hike really quickly (on the side of the road, lol) right before sunset and it was absolutely beautiful...
Long story short, it was definitely a great weekend:)
Allergy-Friendly Recipes
I'm not the best in the kitchen... and I also have a lot of food allergies! This makes the kitchen a difficult and not-so fun place to be. BUT! I have found some AWESOME food blogs that have recipes that I can adjust to my allergies so easily! I'm so so thankful...
So I just have to share with you my two new favorite food blogs:
The first is Sarah from Lady Appleseed. Sarah's blog is newer, but her photography and her blog is so so clean and beautiful. I knew Sarah back in middle/high school when her dad pastored my church! She's a sweetheart, and her recipes look so so yummy. I highly recommend her blog.
I tried her Vegan Roasted Butternut Squash Bisque just a couple nights ago, and really really liked it. The only changes I made, was that I used chicken broth instead of vegetable stock (because that's what I happened to have in the cupboards!) and I quickly grilled some turkey fillets, cubed them, and threw them in for protein.
My other food blog angel is Rachel from Clean Food Crush. My mom sent me a link to her site, and I'm obsessed. She's all about clean eating (obvi) which means that it's already low on grains and dairy and stuff I can't eat.
I've tried her Chicken Cacciatore (so easy and so yummy!!!), Lemon Pepper Sausage + Kale Stirfry (so quick to make! Great for a light dinner or lunch when you have a busy day... I've made this one twice already!) and her Fish Taco Bowls (except I subbed the fish with leftover chicken)(in the picture below).

We've been using it all.the.time. Not only is it warm in the house and create great atmosphere, but Jon loves coming home from work and getting to "play" with fire.;)
And why not bake a batch of gf cookies and make it a date night?
Or make a fire with your coffee on Saturday morning?
My sister sang/acted in a talent show... and won!!
Yep. It's big sis bragging time.
I don't think I can exaggerate to you how talented this girl is... She is only 14. She's beautiful, gifted, and has the best personality. She wants to be an actress on Broadway, which I think is totally do-able because she can dance beautifully, sing beautifully, and act!
She performed at her school last week, and acted + sang I Dreamed a Dream from Les Mis... and she killed it! She came in first place! (and yes... she's taller than me;)
Farm time
My family has a farm an hour-ish from our house, and it has always been my home-away-from-home. (And it's where Jon proposed!) It is beautiful and restful and one of my favorite places.
Last weekend Jon and I went out there with my dad and some of my brothers. While they were hunting in the early a.m. hours, I got to spend some quiet moments amidst the fields and the sunrise.

Looks like a wonderful week! I watched your sister's video on facebook, and I was so impressed! She has an incredible voice. Les Mis is one of my absolute favorites. :-)

That gelato looks so yummy and it's so great that it is allergy friendly! I love soccer! All of these sunset pictures are so pretty! The taco bowls look delicious! Congrats to your sister!
